Easy Recipes to Whip Up During the Coronavirus Movement Control Order

Are you stuck at home with your own cooking due to the coronavirus pandemic? Don’t sweat it as we’ve got your back! 

These simple yet delicious recipes will have you cook up a storm in the kitchen like a pro. Best of all, these secret recipes only require 4 or fewer ingredients to make.

1. Stir-fried eggs and tomatoes

 

Tired of the same ol’ scrambled eggs? Spice it up with some juicy tomatoes! This egg dish is a classic in almost every Chinese household and it doesn’t take long to cook.

Ingredients: 

  1. Eggs (as many as you want)
  2. Tomatoes (as many as you want)
  3. Water
  4. Scallions

How to make:

  1. Heat oil in a medium pan, then, add the eggs.
  2. Wait for the bottom side to be done, while it’s still runny on top, before stirring until the eggs are cooked. Then, transfer the eggs to a plate. 
  3. Now, add garlic into the pan with oil. Stir till it’s fragrant before adding tomatoes. Stir fry the tomatoes till they’re soft and slightly charred at the edges.
  4. Add the eggs into the pan and sprinkle salt and sugar. Mix and stir everything until even. 
  5. Then, serve! 

2. Potato salad

 

Don’t like those leafy greens in your salad? Well, since we’re no health expert, try it with potatoes instead! 

Ingredients: 

  1. Potatoes (as many as you like)
  2. Cherry tomatoes (as many as you like)
  3. Lemon juice 
  4. Olive oil
  5. Spring onions and herbs (optional)

How to make:

  1. Boil/cook the potatoes till tender.
  2. Skin the potatoes and cut them up into pieces.
  3. Mix in the potatoes, tomatoes, spring onions, and herbs into a salad bowl.
  4. Mix the lemon juice and olive oil in a small bowl. Then, pour over the salad.

3. Microwaved steamed egg

 

Smooth, soft, and savoury. Who doesn’t love a wholesome bowl of steamed egg? Here’s a quick method to whip up this delicious egg dish in no time. 

Ingredients:

  1. Eggs (as many as you like)
  2. Water
  3. Seasoning
  4. Scallions (optional)
How to make:
  1. Crack the eggs into a microwaveable bowl you wish to steam in.
  2. Add about a cup of water (or less, if you prefer it denser).
  3. Add some seasoning (black pepper, soy sauce).
  4. Beat the eggs and water well to avoid clumps.
  5. Cover the bowl and microwave it for about 2-3 minutes (until cooked).
  6. If you have, chop up some scallions and add as garnish.
  7. Dig in!

PS: You can also steam the egg in a rice cooker before you set the rice to cook. It’ll take a longer time to cook but the result is an egg custard with a smoother texture.

4. Make your own ‘pizza’

 

If you’re dying for a slice of heavenly pizza but aren’t willing to spend 30 bucks this time around, here’s a cheaper and wayyy easier rendition you can DIY at home. 

Ingredients:

  1. Bread
  2. Sliced meat
  3. Olive oil
  4. Cheese 
  5. Chilli flakes (optional)

How to make:

  1. Place a slice of cheese on each bread.
  2. Then, put the sliced meat on your bread, as many you like. 
  3. Drizzle the olive oil on the meat and sprinkle some chilli flakes for spice. 
  4. After that, toast the bread in the oven for a few minutes. You can also use an air fryer. Be sure to keep tabs of your bread so it doesn’t burn. 
  5. Then, it’s time to eat!

5. Soy sauce fried rice

 

Imagine digging into a bowl of rice, beautifully browned and caramelised by soy sauce with a hint of buttery scrambled eggs. Nothing screams satisfaction like a bowl of sinful fried rice we’re about to make! 

Ingredients:

  1. Rice (preferably overnight, for a drier texture)
  2. Eggs
  3. Dark soy sauce 
  4. Oil/butter

How to make:

  1. Heat the pan with oil or butter (the latter will exude more fragrance). Then, fry the eggs until they're cooked at the bottom but runny on top. 
  2. Add the overnight rice and fry it. Remember to add the dark soy sauce and mix evenly. 
  3. For more texture, you can add vegetables like carrots (diced) into the mix as well. 
  4. If you have, garnish with some spring onions for more aroma. 
  5. And ‘voila’, an irresistible plate of fried rice is ready!

6. Cheesy garlic broccoli

 

Not a fan of vegetables? Maybe this cheesy delight will cure your phobia of the greens. 

Ingredients:

  1. Broccoli (as many crowns as you please)
  2. Cheddar cheese
  3. Garlic
  4. Salt and pepper

How to make:

  1. First, preheat your oven. 
  2. Then, spread the broccoli (cut) in a casserole dish evenly.
  3. Mix the garlic (diced) and strips of cheddar cheese in a bowl. Then, sprinkle them over the broccoli. PS: You can also add some slices of your preferred meat. 
  4. Season well with salt and pepper. Now, go ahead and bake it in the oven for about 25 minutes, or until the veggies are cooked.
  5. Then, it’s time to dish up!

7. Microwaved eggplant with soy sauce

 

If you’re too lazy to hit the stove, you can also count on your microwave to cook your veggies too —  like this eggplant dish we’re about to make! 

Ingredients:

  1. Eggplant
  2. Soy sauce
  3. Chillies (optional)

How to make:

  1. Clean and cut up the eggplant according to your preferred size. You can cut it into half as well.
  2. In a microwaveable bowl, drizzle some soy sauce on the eggplant or any other preferred seasoning. You can also add some chillies for spice. 
  3. Then, put the bowl in the microwave for a few minutes until it’s ready (when your eggplant is slightly translucent in colour). Stop and check every minute while it’s being heated to avoid overcooking it. 
  4. Now, it’s ready to be served!
